Yesterday I got this odd craving for something sweet and girly. Of course I’m two days into my « I’m going to eat healthy and fat free » kind-of resolution, but oh well …
So sweet and girly as we were saying : cupcakes were the way to go. Definitively. White and black chocolate ones, with lots of pinkish girly-girl decorations.
For 16 small cupcakes or 8 regular ones :
For the white chocolate cupcakes:
100 g of sugar
100 g flour
2 eggs
1/2 teaspoon of baking powder
85g butter, softened
75g of crushed white chocolate
For the icing:
6cl of liquid cream
80g dark chocolate (40g or 40g white chocolate and dark chocolate if you want to make two-color icing. Personally, I find the all white chocolate cupcakes way too sweet.)
Preheat the oven (180 ° C)
Whisk eggs and sugar together until the mixture whitens. Add flour and baking powder. Add the softened butter and mix until you obtain a smooth paste. Fill the molds with batter to 2 / 3 (I use silicone molds into which I place small paper molds). Put into the oven for 15-20 minutes.
(Don’t forget to lick the bowl)
Meanwhile, heat the cream in a pan (make 2 pans of 3cl if you wish to do both icings). Remove from heat just before boiling point. Put the chocolate in. Stir gently until chocolate melts completely and the mixture is smooth and shiny. Allow to cool for a couple of minutes.
Once the cupcakes baked and slightly cooled, spread the icing with a spoon on top of the cupcakes. Decorate as you wish.
Let cool to room temperature.
Devour everything.
I use the wonderful little cupcake kit « Atelier Cupcakes » (careful, it’s in French!). The recipes are explained simply and are very doeable. And you get those cute silicone cupcake molds too!
